Claudio Sadler
Chef, 1 Michelin star

An emblematic figure on the Italian culinary scene, appreciated throughout the country for his creative and well-curated cuisine based on traditions and constantly reimagined. He currently lends his talent to the restaurants of the Baglioni Hotels & Resorts group, in 2021 the restaurant Gusto by Sadler at the Baglioni Resort Sardegna was awarded with 1 Michelin star.

Gennaro Balice
Executive Chef

Born in 1994, Gennaro Balice began his experience in Puglia at Masseria Barbera, before moving to London in the kitchens of Zafferano Restaurant. His return to Italy is marked by numerous experiences alongside Chefs such as Antonio Zaccardi and Luigi Taglienti. In 2021 he joined as Sous Chef the restaurant Gusto by Sadler. Since 2022 he is Executive Chef at Canova Restaurant.

The gastronomic offering

Our cuisine features a contemporary approach while at the same time remaining faithful to the Italian tradition. The menu offers unexpected courses that follow the rhythm of the seasons. The absolute protagonist is the catch, with dishes such as Octopus and roasted sweetbread, one of Sadler’s iconic dishes, and the Sogliola alla mugnaia redefined by Balice’s flair. Meat dishes on the other hand include the famous Lamb chop stuffed with foie gras.

Our Venetian Creative Menu pays tribute to the region, with dishes such as Sarde in saor and Cappellacci stuffed with shrimps from the lagoon. Moreover, there is no shortage of vegetarian options.
